Forget scrambled, poached and sunny-side-up. The next time you’re asked how you’d like your eggs at your favorite local brunch spot, request that the chef make them TikTok style. Now, don’t be surprised if you get a few confused looks. After all, the viral TikTok egg boil craze has only just begun.

If you’re a fan of traditional Low Country boils and the equally viral onion boil recipe that has recently been circulating on social media, this egg boil recipe will be right up your alley. While the cooking process is a bit different than other “boil” recipes you may have tried, the end result is equally saucy, equally buttery, and every bit as delicious.

What is an egg boil?

An egg boil is a super quick and easy TikTok recipe featuring jammy, soft-boiled eggs bathed in a rich, buttery sauce that’s jam-packed with flavor. The recipe was born out of the onion boil trend and uses a very similar sauce seasoned with a plethora of dried herbs and spices. While the exact recipe varies between creators, one popular video by @by.nay.a uses a blend of Old Bay, garlic, onion powder, lemon pepper, paprika, Cajun seasoning, chili powder, brown sugar, minced garlic and lemon juice.

Unlike the onion boil, where the onion is cooked in the buttery sauce, an egg boil cooks the eggs and sauce independently of one another. The two are combined only just before serving. From there, the eggs can be dipped and dunked to soak up every last drop of the delectable sauce.

Ingredients

  • 4 eggs
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 teaspoon crushed red chili flakes, or to taste
  • 2 teaspoons Old Bay seasoning
  • 2 teaspoons light brown sugar
  • 1 teaspoon onion powder
  • 1/2 teaspoon lemon pepper seasoning
  • 1/2 teaspoon paprika
  • 1/2 cup chicken stock
  • 2 tablespoons lemon juice
  • Salt and black pepper, to taste
  • Green onions, thinly sliced (for garnish)

Directions

Step 1: Make an ice bath

Fill a small bowl with cold water and ice to make an ice bath and set aside.

Step 2: Boil the eggs

Fill a medium saucepan with enough water to cover the egg by 1 inch and then bring it to a boil. Using a slotted spoon, gently lower the eggs into the boiling water. Cook for six to seven minutes for a soft yolk or eight minutes if you prefer a more set yolk. Remove the eggs from the water and immediately plunge them into the ice bath. Leave submerged for two to three minutes or until cool enough to handle.

Meanwhile, prepare the “boil” sauce. In a small skillet over low heat, melt the butter. Add the minced garlic and chili flakes and cook for one minute or until fragrant. Add the all of the seasonings and stir to combine. Then, pour in the broth and increase the heat to medium-high. Simmer for six to eight minutes or until the sauce has reduced slightly. Whisk in the lemon juice and add additional salt and pepper to taste. Keep warm over low heat.

Editor’s Tip: Old Bay and lemon pepper seasonings often already contain salt, so make sure to taste your sauce before adding any additional salt. For the record, we didn’t feel like our sauce needed extra salt, just a few cracks of black pepper.

Step 4: Peel the eggs and slice

Yes! While TikTokers may be obsessed with marrying the spicy sauce with an unctuous runny yolk, an egg boil is equally delicious with a hard-boiled egg, too. Just let the eggs cook for an extra minute or two to ensure the yolk is fully set before popping them in the ice bath to cool.

It’s already time to start meal planning for the holidays, and perhaps the most fun course to prep for is the appetizer round. In recent years, the creativity in this arena has proliferated on TikTok and YouTube, with everyone swapping clever ideas for presentation. Case in point: Deviled eggs, already an eye-catching appetizer, are getting a sparkly upgrade. Christmas glitter deviled eggs, anyone?

How do I make glitter deviled eggs?

Here’s a quick rundown for those who might not have encountered them: Deviled eggs are a party appetizer consisting of hard-boiled eggs that have been halved, with the yolks removed. The yolks are mixed with mayo and often mustard and spices, then piped prettily back into the egg white halves, which form a little edible cup. It’s a one-bite hors d’oeuvre that hosts can adjust to their own preferences with the addition of Worcestershire or a sprinkling of paprika. Or, in some cases, with food dye and edible glitter.

In a TikTok video from last November, creator Arnesha Reshay creates Christmas glitter deviled eggs by dyeing the egg whites red and green, then dipping each one in a thick layer of edible red and green glitter. The video has been viewed more than 9 million times, and other users have since taken up the project, sometimes using gold glitter or arranging the eggs in a Christmas tree shape.

Can you eat deviled eggs with glitter?

Although Reshay jokes in the caption of her video that “everyone was too scared to eat them,” these striking appetizers can indeed be eaten safelyas long as the cook has used the right glitter. As explained on the FDA website, glitters specifically intended for consumption should note that they’re edible and have a list of ingredients on the label indicating food-safe contents; those ingredients typically include some combination of “sugar, acacia (gum arabic), maltodextrin, cornstarch and color additives specifically approved for food use.”

While your everyday glitter found at the craft store probably won’t make you sick if you eat a little bit of it, you definitely don’t want to consume it on purpose. That stuff is made of finely minced plastic and aluminumhardly the ingredients that inspire holiday cheer.

There are many ways to tweak a sweet potato pie, and a bit of citrus is becoming increasingly embracedbut it’s certainly not a new baking tip. According to the /Old_Recipes subreddit, lemon has appeared in sweet potato pie recipes for over a century.

Why does it make pies better?

As Camirra Williamson of Camirra’s Kitchen notes in her sweet potato pie tutorial, adding a bit of lemon juice (between 1 and 1 1/2 teaspoons) can bring out the flavor of sweet potatoes so they aren’t entirely masked by the warm spices. It’s important not to add too much, though; otherwise, the lemon juice will assert its own flavor and ruin the effect.

J. Kenji Lopez-Alt has saidthat if a recipe tastes like it’s missing something, it’s not necessarily that it’s been underseasoned; it just needs acid. You can add all the cinnamon, nutmeg, ginger and allspice to a pie as you like, but a bit of acid will really bring all those flavors together.

Other TikTok users similarly insist that the juice of half an orange and half a lemon, while non-traditional, “takes the recipe up a notch” and “brings back the brightness” to contrast with the rich, buttery flavors of the filling.

I created this pickle-brined turkey recipe because my husband is a pickle fanatic. He’s obsessed with pickles and is even known to steal them off other people’s plates. I thought a blend of dill pickle juice, salt and spices would make a moist turkey with just the right amount of tangy dill pickle flavor.

I hadn’t done much meat brining before trying this recipe. Luckily, the process is very straightforward, which is great news for brining newbies: Just submerge the turkey in pickle-flavored liquid for 12 hours. (Our brining guide has more in-depth information on this technique.) The liquid creates a tender texture and infuses the meat with flavor.

The finished pickle-brined turkey has lots of colorgolden brown with a yellow hue from the pickle juice. The meat has a light pickle flavor, and it’s really juicy. I added red potatoes and onions to the pan. Both taste pretty good with a hint of pickle! I even used the carcass to make homemade turkey stock and turkey gravy, and guess what? They have some pickle flavor, too. My husband was in heaven.

Ingredients for Pickle-Brined Turkey

  • 2 quarts dill pickle juice

Line a large stockpot or food-safe plastic bucket with a turkey oven bag. Pour in the pickle juice, 2 quarts of water, kosher salt, pickling spice and four sprigs of fresh dill; stir to combine the ingredients. Remove the giblets and neck bone from the turkey. (Save them for make-ahead gravy.)

Tuck the wings behind the top of the bird. Lower the turkey into the brine, turning it until it’s submerged. Tie the top of the turkey bag closed. If necessary, set a heavy plate or bowl on top of the turkey to keep it submerged. Place the bucket or pot in the fridge and let the turkey brine for 12 hours.

Editor’s Tip: If you don’t have a pot or bucket, or if you don’t have space available in the fridge, put the bag with the brine and turkey into a large cooler filled with ice.

Step 2: Prepare the turkey

A seasoned raw turkey is placed in a roasting pan, surrounded by assorted chopped vegetables like potatoes and zucchini, garnished with fresh herbs, ready for cooking on a wooden surface.

Preheat the oven to 325F. Have a roasting pan ready with a small rack in the bottom. Move the oven rack down one notch, so the top of the turkey won’t be too close to the heating element. Remove the turkey from the brine and let the excess liquid drain away; discard the brine and bag.

Slice one of the onions into quarters. Place the quarters in the turkey cavity, along with six of the pickle spears and three fresh dill sprigs.

Use kitchen twine to tie the legs together. Set the turkey into the roasting pan. Slice the remaining onion into quarters; slice the red potatoes into 1-1/2-inch pieces. Place the onions, potatoes, remaining pickle spears and 2 tablespoons of oil into a small bowl; toss the ingredients together. Scatter the onions, potatoes and pickles around the turkey in the roasting pan.

Step 3: Brush with sauce and roast
